Desaltification of sea water
Many commercial plants do in fact use double distillation of sea water.  But they use the waste heat from a Power plant to heat up the sea water. In the process they cool and condense the low pressure steam.  So the process is quite energy efficient.  As far as I know, most of the Gulf plants use this process, not reverse osmosis.
